Sugo Semplice
Preparation Time 5 Minutes | Cooking Time 35 Minutes | Serves 4 – Starter and Main dish |
Ingredients
- 1/2 cup olive oil
- 1 onion, diced
- 700 ml bottle passata (tomato puree)
- 1 cup water
- 1 1/2. tsp cooking salt
- 1/2 tsp pepper
- 1/2 cup fresh basil
- 500 gm pasta or spaghetti
- Parmesan cheese, grated (for serving)
Method
- On a medium heat, place the oil in a saucepan.
- Sauté the onion.
- On a high heat, add the bottle of passata, water, seasoning and
- basil, and stir and bring to the boil.
- Reduce the heat and simmer for 30 minutes, stirring regularly.
- While the sauce is cooking, cook and drain the pasta or spaghetti
- (as per packet instructions).
- When the sauce is cooked, stir it through the drained pasta
- or spaghetti.
To Serve
Serve hot, and top with a sprinkle of parmesan cheese.
